Ultimate Oatmeal

Ultimate Oatmeal w/ greek yogurt, almond butter, almond milk, protein powder, strawberries and cinnamon!

Ultimate Oatmeal w/ greek yogurt, almond butter, almond milk, protein powder, strawberries and cinnamon!


Mix together:

1/2 cup old-fashioned oats

1 cup unsweetened almond milk

Microwave for 1 min

Add and stir in:

1/2 scoop vanilla creme protein powder

1 tsp plain Greek yogurt

1 tsp almond butter

As much cinnamon as you want-about 1/4 tsp or so

Microwave for another 1 and 1/2 min (oatmeal is tricky so you have to keep an eye on it when it is in the microwave or it will explode-not fun to clean up but not the worst thing that can happen in your day!)

Slice your favorite berries or apples and top off (about 1/2 cup chopped)

Essential to a balanced breakfast, you have your clean oats (complex carbs) and protein (Greek yogurt, almond butter and powder) with a kiss of natural sugar from the berries!!

Baked Sweet Potatoes with Pineapple & Coconut Almond Chicken Tenders

2 large yams or sweet potatoes-peeled and sliced or cubed

8 oz chopped pineapple

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tbsp butter

1/3 c orange juice

Toss together in baking dish and bake covered in 385 degree oven for 45 to 55 min (yes, it's that easy!)

Coconut Almond Chicken

Take 3/4 cup unsweetened almond milk or coconut almond milk and whisk together with 1 tbsp plain Greek yogurt in a shallow dish and set aside. In another shallow dish take 1/4 c millet flour, flaxseed meal or almond meal and mix together with 1/2 c panko or whole grain bread crumbs, 1/2 c unsweetened coconut flakes and 1/4 c finely chopped almonds.

Take 1.5 lbs chicken or turkey breast and cut into tenders. Dip each tender in the milk/yogurt and then in the flour/coconut/breadcrumb mix.

Place on baking sheet and bake at 385 for 35 to 40 min flipping over halfway through.

***FIT Tip***chose your ingredients wisely- Millet flour vs white flour, unsweetened coconut vs. sweetened, Greek yogurt vs. regular yogurt. Better ingredients=a better you!!!

Coconut, currants and chocolate granola

Ingredients:

6 cups old-fashioned oats

2 cup combined chopped and silvered plain almonds

1 cup unsweetened coconut flakes

1/4 cup cinnamon

Combine above ingredients and bake into 3 batches on cookie sheet at 350 for 20 min-giving it a shake halfway through

When you take pan out of the oven drizzle 1 tbsp of pure honey over baked mixture and let cool.

Let cool for 10 min then add 1/3 c dried black currants, 1 heaping tbsp of the coconut flakes and 1/4 c mini choc chips to each "batch".

Store in tight container in fridge. 1 serving is 1/4 cup which makes about 40 servings. My rule with granola making-always share with your friends and family-spread the love!!

Some facts about the black currant:
*More than 5 times the vitamin C of oranges
*As high as banana in potassium
*More calcium than any fruit
*Contain more phosphorus and potassium than any other fruit
*Second only to elderberry in iron and protein

Enjoy with milk, plain by the handful or with Greek Yogurt!! Pairs really well with Almond Breeze Coconut Almond unsweeteded almond milk! (45 calories per cup!!)

Instead of milk I used green tea with extra tea extract and other added natural ingredients that help with cleansing and also have anti oxidant benefits!

Ingredients:

1/2 c cold green tea (from a tea bag, no sugar added)

1/2 c plain Greek yogurt

handful (combined) of strawberries, cranberries and pineapple

1 med banana

2 tsp glutamine

3 tsp oats

4 ice cubes

Blend & Enjoy! I hope you like it and its added benefits from the tea!!

Apple Tart Smoothie

Ingredients:


3/4 c Plain Greek yogurt (can sub with a banana and 1 scoop protein powder...will be less "tart' though)-which you may like even better!

1 small granny smith apple chopped-skin on

1/2 c almond milk, soy, skim or whatever you like-but keep it on the lite side

3 tsp oats

1 tsp chia seeds

2 tsp flax seeds

throw in a few of each: walnuts and almonds

3 ice cubes

Blend

Enjoy!

Healthy Cheeseburger Pizza

Who says eating healthy isn't super yummy and delicious!? Make smarter choices and enjoy all of your favs! I used Greek yogurt, lean beef and a better crust choice than the traditional pizza and voila! I get to eat one of my favorite things and my jeans still fit! Awesome!

What you will need:

Crust-thin or whole wheat

Meat-ground turkey, lean or extra lean ground beef (1/2 lb)

Sauce: 3/4 c plain Greek yogurt, 2 tsp spicy brown mustard, 2 tsp ketchup, 2 tsp hot sauce, salt sparingly, pepper and red pepper flakes to your liking

Toppings: chopped onions, pickles, tomatoes

Cheese: 1/2 cup shredded mozzarella or Colby jack cheese-the less cheese the better so go easy

Bake according to the crust instructions.

Greek yogurt dip with honey, cinnamon and peanut butter

1 and a half cups of plain Greek yogurt

2 tsp peanut butter

1 tsp cinnamon

2 tsp honey

Mix well and serve with red and green apples-like I did for a holiday party or with any fruit on any day as a healthy snack. I think this would also be good to spread on toast in the a.m or eat by the spoonful like I could do because I love it so much!

***Can substitute pumpkin instead of peanut butter, or use almond, apple butter or pumpkin butter instead.

Great source of protein!!!! Are you eating enough protein??? Tuna and Greek yogurt are 2 great and affordable sources. I eat Greek yogurt every day at some point whether it is in tuna salad like this, with granola or alone with berries or fruit. Try just adding Greek yogurt to something you are maybe already eating daily and watch what happens!!! It is an awesome and healthy substitute to mayo or even  cheese when called for in recipes.

2 4.5 cans of white albacore tuna (StarKist selects if you are feeling fancy!) Great source of omega 3, low sodium, high protein, low carb)

3/4 c Greek yogurt (my favorite healthy food in the whole world)

2 tsp low sodium soy sauce

2 tsp wasabi mustard

3/4 c chopped cucumber

2 tsp chopped onion

1 stalk chopped celery

salt, pepper and parsley to taste

Options to eat:

Alone with whole wheat pita chips

On a flatout flat bread with more veggies

With hard-boiled eggs, cheese and tomatoes on a platter

Be creative and sneak other veggies, herbs or spices in there-you don't have to do it exactly how I posted it!

Twice baked sweet potatoes w/Greek yogurt, ricotta, black beans and blue cheese

Twice Baked Sweet Potatoes-maybe my favorite thing to eat in the whole world!

Step 1: Microwave sweet potatoes until able to cut in half and scoop out 3/4 of the inside.

Step 2: Add scooped sweet potato to 1 heaping tbsp plain Greek yogurt, 1 heaping tbsp skim ricotta cheese, 1/4 c almond milk (optional), 1/4 c black beans and 1/4 c  crumbled blue cheese.

Step 3: Mix together with hand mixer until well blended and slightly fluffy

Step 4: Bake for 15 to 20 min at 375 degrees

Other combos to try for the stuffing:

Spinach, black beans, Greek yogurt and feta cheese

Ricotta cheese, tuna, red onion and Greek yogurt

Granola w/ Pepitas, walnuts, almonds, dried cranberries and mini choc chip morsels



INGREDIENTS:

4 c old-fashioned oats

1 c raw natural sliced almonds

1/2 c chopped walnuts

1/4 c flaxseed meal

1/4 c honey

McCormick's Cinnamon and Sugar grinder-about 2 tbsp or 20 grinds



 

 

 

 

 

 

 

Mix together and bake for 15 min at 350 degrees, give it a shake around to be careful not to burn any one area and bake for another 10 min. Make sure it is spread thinly and evenly on the pan.

Let cool for 25 min then add:

1 c roasted & salted pepitas (the inside of a pumpkin seed-very high in protein)

1/2 c dried cranberries

1/2 c mini chocolate chip morsels

Makes 8 total cups or 32 servings-a serving size is 1/4 cup.

I love to put mine on Greek yogurt or have it with almond milk. It is very satisfying and helps with my sweet and salty cravings!
